◆ Garden rhubarb is a perennial herb of the genus Rheum in the Polygonaceae family. It thrives in cool conditions, features strong cold resistance and cannot tolerate high temperatures. Its thick petioles are pale red with dense fine red lines and have a crisp, fresh texture. Tender petioles show a bright red hue. The petioles can be eaten as fresh fruit after being sweetened with sugar, and they are also widely used for making pies, preserves, jams, wine or chutneys. Please note that only petioles are edible; the leaves are inedible.
